wine & flavors

At Bu’ul Restaurant in Chablé Maroma, we’ve designed something truly exceptional: a monthly dinner series called Wine and Flavors. This isn’t just a meal—it’s an immersive experience where culinary artistry and the world of wine unite to create unforgettable moments.

The name is no coincidence. Our deep passion for wine and the international recognition of Bu’ul’s cellar fill us with pride. This year, we were honored with the “Best Medium-Sized Wine List in South America, Central America, and the Caribbean” by the World’s Best Wine Lists Awards. We also received the prestigious “Red Star” distinction from Star Wine List and ” Two Glasses” from Wine Spectator. Since 2024, we’ve maintained a “Two-Star” rating from World’s Best Wine Lists.

And Bu’ul’s excellence doesn’t stop there. The MICHELIN Guide proudly recommends us in its 2024 and 2025 editions. More than just a list of accolades, this is a testament to the dedication and care we put into every detail to make your experience, quite simply, extraordinary.

We’re excited to celebrate our tenth edition of Wine & Flavors this September, a milestone that reflects the growing prestige and enthusiasm surrounding this series. And because we want you to be a part of this celebration, we’re sharing the calendar for the rest of the year, where world-class chefs and sommeliers will join us for these unmissable experiences.

10th Edition: September 20th

Prepare for an unparalleled evening with Chef Andrea Lizárraga, founder of Nao Kitchen Bar in Mazatlán, Mexico, who will unite her culinary talent with Sommelier Adriana Zazueta. Adriana holds the prestigious Diploma in Wine and Spirits (DipWSET), a globally recognized credential for excellence in wine knowledge and tasting.

11th Edition: October 25th

From Toronto, Chef Steven Molnar of Quetzal Restaurant (a MICHELIN Star recipient) will bring his distinctive culinary perspective. At Quetzal, regional Mexican cuisine is celebrated with little-known moles, sauces, and ingredients, all prepared over a striking 8.5-meter wood-fired grill. For this special night, Chef Molnar will be accompanied by Winemaker Claudia Horta, whose expressive, terroir-driven wines will complement the bold flavors of a fire-kissed menu.

12th Edition: November 22nd

It will be an honor to host Chef Yahir Franco, the first Mexican chef to earn a Green MICHELIN Star for his sustainable leadership at Frea in Berlin. Now at the helm of Elotl Restaurant, also in Berlin, Chef Franco is known for fusing modern techniques with deep Mexican traditions, always with a strong environmental commitment. His distinctive flavors will be paired with the creations of Oscar Gahona, esteemed winemaker from Monte Xanic, one of Mexico’s most celebrated wineries.

13th Edition: December 27th

We close the year with a very special night, featuring a guest chef from the acclaimed El Celler de Can Roca, the three-MICHELIN Star restaurant in Girona, Spain, celebrated globally for its innovative approach to Catalan cuisine. The evening will be complemented by Sommelier Martha Cartizars, promising an unforgettable finale to the Wine & Flavors series.
