RAYO BAR Comes to Raw Bar at Chablé Maroma: A Collaboration that Celebrates Mexican Hospitality, Flavor, and Authenticity

Starting August 1, 2025, this commitment evolves with the arrival of RAYO BAR at Raw Bar by Bu’ul—a creative partnership that brings together two distinct visions with a shared purpose: celebrating the best of Mexico through the art of mixology.

Recently ranked No. 5 on North America’s 50 Best Bars 2024, RAYO BAR has earned international acclaim for its bold, innovative approach and deep reverence for Mexican spirits and flavors. Led by Miguel Bolaños, RAYO joins forces with Chablé Maroma to unveil a new cocktail offering and kick off a series of guest bar collaborations set to take place at Raw Bar throughout the rest of the year.

Facing the Caribbean Sea, Raw Bar is a space devoted to the freshness, origin, and technique behind each ingredient. Its fusion with RAYO gives rise to a one-of-a-kind menu expressed through two new cocktail collections:

  • Five signature creations by RAYO, crafted especially to be enjoyed with a view of the sea
  • Five collaborative cocktails, co-developed by RAYO’s bartenders and the Chablé Maroma mixology team, reimagining classics with local ingredients and a modern twist

Among RAYO’s standout creations:

  • Rayo Marítimo – An umami-forward, saline tribute to the Mexican coast, with a refined Japanese influence
  • Zamora Spritz – Fresh, fruity, and inspired by the vibrant strawberries of Michoacán
  • Puntas y Colas – A bold cocktail that transforms discarded elements into something extraordinary
  • Pápalo Martini – A refined, herbal take on the classic martini, featuring bacanora and Lillet Blanc
  • Pox Malone – A liquid ode to Chiapas’ tascalate, blending corn, chocolate, and cinnamon
