After studying Business Administration and Culinary Arts at the Culinary Center of Mexico; Ambrosía, Vallejo spent a season offshore on Princess cruises. Later he worked and spent seasons in kitchen’s restaurants such as Noma, Pujol, Diana Restaurant at St. Regis Hotel, and served as a Corporate Chef for Habita Group. In 2012 he decided to open Quintonil along with his wife Alejandra Flores where for eight years he has been the nerve center of the dialogue that Vallejo has built with the memory and the present of Mexico’s culinary tradition. Since 2015 Quintonil has been on The World’s 50 Best Restaurants list.
His passion for Mexican gastronomy has made Luis Quiroz one of the best Chefs in the region. From the beginning of his career, he has been interested in learning and working in the various areas that require restaurant management. Upon completing his degree in Tourism, Hotel and Gastronomic Business Administration at the Del Valle de México University, Luis began collaborating in several renowned restaurants in Mexico and in the United States. Currently, he is the Executive Chef of Chablé Maroma where he creates a different gastronomic proposal every day, happy and tasty experiences that contribute to our guests’ wellness.
