Chablé’s culinary offer was designes by acclaimed Chef Jorge Vallejo. His restaurant Quintonil (CDMX), was awarded in 2018 as the #22 by “The World’s 50 Best Restaurants”.
Under his leadership, Luis Ronzón our Executive Chef enhances the gastronomic experience at our three restaurants – Ixi’im, Ki’ol & Spa Restaurant- which is based on organic & seasonal cuisine mostly sourced from the on-site traditional Maya Gardens.
Ixi’im, which translates to “corn” in the Mayan language, offers a refined setting within the lush jungle of Chablé’s expansive grounds. The sophisticated menu created by Jorge Vallejo showcases an innovative blend of Mexican and local influences, integrating fresh herbs, fruits and vegetables harvested and gathered from the resort’s traditional Maya Garden. The restaurant also features the largest Tequila Collection in the World, innovative cocktails and a tailored wine list.
Ixi’im is Chef Jorge Vallejo’s second project following the successful debut of Quintonil, which was recently ranked the #22 best restaurant in the world on “The World’s 50 Best Restaurants” annual list.
Honoring its name in Mayan, which means «healthy», Ki’ol is a breath of fresh air. Within its oasis-like, vibrant, tranquil ambiance, Ki’ol offers delicious meals crafted with fresh produce grown in our Maya Garden.

At the heart of Chablé is a traditional organic Maya Garden, recreating harvesting techniques that have not been used in over a century.
Chablé’s culinary experience farm-to-table is based on the fruits, vegetables & herbs that are mostly sourced from this organic Garden.
The Maya Garden consists of raised garden beds made from local woods, and constructed using no man-made elements, this was called by the Maya ”Ka’anche’s”. Each bed is filled with organic soil and seeds harvested through traditional Maya methods by Chable’s resident Maya horticulturist. Upon request, guests will have the opportunity to partake in the gardening process during their stay.
Is one of Mexico’s most recognized young chefs on the culinary scene, at home and abroad, whose sold, ever-upward career path has been an unstinting labor of love and enthusiasm.
After discovering his culinary bent as a teenager, Vallejo entered the Centro Culinario de México to study Culinary Administration and Arts. A restless spirit led him to set sail with Princess Cruises in 2004, where he worked on voyages to all corners of the globe. Once back on land, he joined the team at Pujol and was later Corporate Chef at Grupo Habita, where he oversaw kitchens at the Condesadf, Habita and Distrito Capital hotels. He became Executive Chef at the St. Regis hotel’s Restaurante Diana, in 2010, before traveling to Copenhagen for a season at Noma.
2012 was a critical year. Alongside his wife Alejandra Flores, Vallejo opened Quintonil, his “life project” (according to a number of public declarations); the couple’s hard work and dedication earned them almost-immediate acclaim and the restaurant was a 2012 Travel+Leisure MéxicoGourmet Awards nominee in the “Best New Restaurant” category.
In 2014, FOUR Magazine named Vallejo a “World Rising Star” and he also won “Best Plate Presentation” at the Gourmet Awards. That same year—in collaboration with Chefs Mauro Colagreco (from France’s Mirazur) and Virgilio Martínez (from Central, in Peru)—Vallejo started the Orígenes initiative, designed to rescue and preserve culinary products, techniques and customs in small Latin American communities. The initiative is an inclusive program that seeks to involve academics, cooks and students in its rescue efforts. Since its founding, member chefs have journeyed to towns and villages throughout the Western Hemisphere to study culinary customs at the same time they share experiences and teachings.
2014 also saw Quintonil take tenth place on the “Latin America’s 50 Best Restaurants” list, rising to sixth place the following year. By 2016, the restaurant had reached 6 place. GQ Hombres named Vallejo “Chef of the Year” in its 2015 awards and he received that year’s Millesime México “Best Restaurant” prize. Mexican monthly Quién includes him on its list of Mexico’s transformative personalities.
In September, The Best Chef—an organization promoting new global culinary talents—invited him to a Lyon, France, dinner for the world’s 100 best chefs.
British-based Restaurantmagazine ranked Quintonil 35th in its 2015 “50 Best World’s Restaurants” listing and it jumped to twelfth place in 2016—to date, the highest position a Mexican restaurant has occupied.
Vallejo has participated in festivals and congresses in Mexico and abroad, including Morelia en Boca, Mesamérica, Paralelo Norte and both the Spanish and Filipino editions of Madrid Fusión.
His work has been featured in a variety of publications such as Apicius (in which Quintonil was the youngest restaurant ever to appear) as well as Newsweek, Bleu & Blanc, Gula, Chilango, El Universal, Luxury Travel Magazine, Travel & Leisure, Food and Travel, GQ Méxicoand Quién, among many others. 2016 also saw his name added to the “Mexico’s 300 Most Influential Leaders” list.
Public accountant by profession, soon changed the numbers by the stove.
Since then, he has continued his professional career in Mexico and abroad to extend and perfect his gastronomic practice. His excellent performance has given him the opportunity to work for internationally renowned restaurants.
Luis has traveled through internationally renowned cuisines, including restaurants such as Noma (Copenhagen) and Malabar (Peru) and in recent years as sous chef of Quintonil (Mexico City). These experiences introduce him into the gastronomic experimentation, the local production and the cultivation of traditional products.
In 2016, he served as chef of Mexican Contemporary Cuisine at the Ambrosia Culinary Center and today he is the Executive Chef at Chablé Resort & Spa and in charge of Ixi´im Restaurant cuisine, contributing there with his knowledge and creativity and materializing the ideas of Chef Jorge Vallejo.

Our Signature Life Balance Ritual channels the Mayan understanding of the universe through therapies that integrate the whole being. Knowledge and practices provided by traditional cultures offer insight into maintaining inner balance and harmonizing with the external world. The contemporary mental, emotional and physical stressors that impact us on a daily basis are the canvas on which we construct or dilute our well-being. Drawing on traditional Mayan wisdom, this Ritual focuses on calming the nervous system, purifying the body, and opening the emotional pathways to result in the inner tranquility necessary to live a life in balance. The experience begins with a Chablé Welcoming ceremony with Mayan Ritual elements to balance the energies of the five cosmic directions of the Earth and orient our guest in time and space. The authentic Maya town of Chocholá is just minutes from the resort.
The town is alive with textile shops, markets, and local eateries. Bikes are available to guests for rides into town to experience a typical day in the Yucatan. With more than 90% of the staff residing from Chocholá, residents are always eager to showcase this quaint town.
For those guests interested in venturing further, Mérida is just a 20-minute drive from the resort. The city of Mérida is a cultural center, with numerous museums, art galleries, restaurants, theatres and shops that come alive at night with music and dancing. The streets of Mérida are lined with beautiful colonial buildings. The famous avenue, Paseo de Montejo, is adorned with original sculptures.
The area that surrounds Chablé is rich with Mayan Ruins. Self-guided or guided day trips can be arranged to Uxmal, Chichen Itza, The Puuc Route Ruins, among other important sites.
The beach is located in the town of Progresso just one hour north of Chablé. Additionally, the Yucatan is famous for its natural cenotes, and guests can easily access a number of these sacred swimming holes nearby.
Celestún is another great day trip (1.5 hour drive).
Here guests will find a sleepy fishing town dotted with nice beaches and home to the Reserva de la Biosfera Ría Celestún, a wildlife sanctuary teaming with flamingos and an abundance of marine life.
